I'd check the Proxmox side as well, especially since manually created VMs don't seem to have the problem. If the DHCP packets aren't showing up at all when the issue occurs, it sounds like the NIC may not actually be coming up or attached correctly rather than DHCP itself failing. Comparing the network configuration of an affected Virtualizor VM with a working manually created VM could be a good place to start.
